Nacho Ordinary Cinco De Mayo: HoneyBaked Ham & Black Bean Nachos

It's almost Cinco de Mayo and our HoneyBaked Ham Douglasville crew is celebrating in a not-so-ordinary way by adding our classic Honey Baked Ham to everyone's favorite Mexican-style dish... nachos!

Try this delicious recipe tonight. It's muy bueno!

HoneyBaked Ham & Black Bean Nachos

Ingredients
- 1 large bag of tortilla chips
- 4 jalapeno peppers
- 2 cups HoneyBaked Ham, cubed 
- 1 ½ cups or 15 ounce can Black Beans, cooked and drained
- 8 ounces Salsa (we used 505 Southwestern Chipotle Honey Roasted Green Chile salsa)
- 1 cup smoked Gouda cheese, grated
- 1 cup mild cheddar cheese, grated
- 1 cup pepper jack cheese, grated
- ¼-1/3 cup fresh cilantro, chopped
- 8 ounces of sour cream

Directions
1. Turn on the oven broiler. On a baking sheet, place the jalapeno chilies. Place the baking sheet underneath the broiler element in oven. Check frequently for blackening. Once the chile has blackened on one side rotate it until all sides are fully blackened (note: the skin will be difficult to remove if it has not blackened first).
2. Remove the chilies from the oven and place into a zip plastic bag. Seal and place in the refrigerator for 15 minutes or until cool enough to handle with your hands.
3. Peel off the blackened outer skin of the chile. Remove the stem, seeds and inner membrane (attaches the seeds to the inside of the chile). Chop and set aside (note: the oils from chilies can be very painful if they come in contact with areas such as the eyes or nose). When working with chilies practice frequent hand washing or consider wearing latex-type gloves.
4. Heat the oven to 400 degrees. In a large bowl, add the three cups of cheese and stir to fully combine. Set aside. Prepare a baking sheet with a layer to tortilla chips to cover the pan.
5. Sprinkle 1/3 of the chopped ham and cheese over the first layer of chips. Add a second layer of chips, completely covering the first. 
6. Layer on the remaining ham, black beans, roasted chopped jalapeno chilies and salsa topping with the remaining cheese.
7. Place in the heated oven until the cheese fully melts (usually less than 5 minutes). 
8. Remove; top with chopped cilantro and sour cream (or serve both on the side if desired). Eat immediately.

Lucky Leprechaun Leftovers: HoneyBaked Turkey, Broccoli & Rice Salad

Who knew leftovers could be laced with a bit of luck o' the Irish? In this week's featured recipe our HoneyBaked Ham Douglasville crew combines leftover HoneyBaked turkey breast, broccoli bits and whole grains to make a superb salad salad dish that's festive enough to serve up for St. Patty's Day!


HoneyBaked Turkey, Broccoli & Rice Salad


Combine in a bowl and mix well to distribute:

- approximately 1 1/2 cups leftover broccoli, finely chopped
- 1 cup leftover cooked rice
- 1/2 cup chunks of Bleu cheese (or other stronger cheese like Parmesan or Cheddar)
- 1/2 red bell pepper, diced
- 1/4 cup or more Ranch or Italian style dressing (or mix them both together)
- 1 cup HoneyBaked Ham
® or Turkey, diced

Garnish with:
- fresh basil leaves or sliced green onions
- serve and enjoy your Lucky Leprechaun Leftovers (serves 2-4)!

Wing It for Mardi Gras with HoneyBaked Turkey Gumbo

Why travel to New Orleans to enjoy a festive feast full of French Quarter flavors when you can celebrate from the comfort of your own home?! 

Check out this marvelous Mardi Gras recipe from our HoneyBaked Ham Douglasville crew using our classic HoneyBaked turkey meat:

HoneyBaked Turkey Gumbo


Over high heat in a large saucepan sauté:
- 1/4 cup olive oil
- 2 scallions, chopped
- 1 small onion, finely chopped
- 1 rib celery, finely sliced
- 1 red bell pepper, seeded and cut into 1/2" cubes

Reduce heat to medium and stir the vegetables around until tender, about 3 minutes. Then add and saute´ for 1 minute:
- 1 clove garlic, minced
- 1/4 teaspoon cayenne pepper
- 1 teaspoon dried thyme
- 1 teaspoon cumin

Then add and bring to a boil:
- 2 cups chicken stock
- 1 six (6) oz. can small pink beans
- 1 ten (10) oz. pack frozen spinach leaves, thawed and squeezed dry
- 1 ten (10) oz. package frozen sweet corn kernels

Cover and simmer gently for 20 minutes to bring flavors together. Then add and stir together until heated through:
- 1 1/2 cups diced HoneyBaked Sliced Turkey Breast

- 1 1/2 cups of sliced Andouille or lean smoked pork sausage
- 4 oz. frozen cut okra (optional)
- 1/2 cup minced parsley

Serve over boiled rice with hot sauce on the side (makes 4 servings).

Bead Dazzling This Mardi Gras ... with HoneyBaked Ham Jambalaya

In case you weren't aware, Mardi Gras celebrations begins soon... and to celebrate in style, our HoneyBaked Ham Douglasville crew has a quick & easy recipe you can whip up just in time for Fat Tuesday!

HoneyBaked Ham Jambalaya


Heat in a large Dutch oven over medium heat:
- 3 tablespoons olive oil

Add and sauté until tender (about 10 minutes):
- 2 large onions, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 large garlic cloves, minced

Mix in and bring to a boil:
- 1 28 oz. can of organic ready-cut tomatoes with juices
- 1 cup diced HoneyBaked Ham

- 1 cup peeled, de-veined shrimp
- 1/2 cup dry white wine or low-sodium chicken stock
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon paprika
- 1 tablespoon chili powder
- 1/4 teaspoon cayenne pepper

Stir in well:
- 3/4 cup long grain white rice

Reduce heat to medium-low and simmer until rice is tender and most of the liquid is absorbed (about 20-25 minutes). 

Season with salt and pepper, serve and enjoy (serves 6). Here's to a BEAD-dazzling Mardi Gras celebration!

Once A Week Go Greek! HoneyBaked Ham Douglasville's Mediterranean Orzo Salad with Turkey & Feta

Prepare a colorful dinner salad inspired by the Mediterranean with this delicious recipe from your HoneyBaked Ham Douglasville Crew. Made with our tender, moist and juicy Roasted Turkey Breast, you know you'll be serving the best, without all the stress!

HoneyBaked Orzo Salad with Turkey & Feta

Ingredients

-1 1/4 cup dried orzo pasta 
-1/2 cup grape tomatoes, halved 
-1/2 cup, pitted Kalmata olives, drained, sliced
-1/2 cup roasted red peppers
-1 medium cucumber, diced
-1/4 cup green onion, diced
-1/4 cup fresh parsley, chopped
-1/4 cup lemon juice
-1/4 cup olive oil
-2 Tbsp parmesan cheese
-1/3 cup feta cheese, crumbled
-1 1/2 cup, HoneyBaked Roasted Turkey Breast, diced
-1/4 tsp freshly ground black pepper

Directions

-Cook orzo following package directions, drain well. Cool orzo slightly and place into large bowl. 

-Add remaining ingredients, mix well. Refrigerate 3-4 hours or overnight before serving.
