Prepare a colorful dinner salad inspired by the Mediterranean with this delicious recipe from your HoneyBaked Ham Douglasville Crew. Made with our tender, moist and juicy Roasted Turkey Breast, you know you'll be serving the best, without all the stress!

HoneyBaked Orzo Salad with Turkey & Feta

Ingredients

-1 1/4 cup dried orzo pasta 
-1/2 cup grape tomatoes, halved 
-1/2 cup, pitted Kalmata olives, drained, sliced
-1/2 cup roasted red peppers
-1 medium cucumber, diced
-1/4 cup green onion, diced
-1/4 cup fresh parsley, chopped
-1/4 cup lemon juice
-1/4 cup olive oil
-2 Tbsp parmesan cheese
-1/3 cup feta cheese, crumbled
-1 1/2 cup, HoneyBaked Roasted Turkey Breast, diced
-1/4 tsp freshly ground black pepper

Directions

-Cook orzo following package directions, drain well. Cool orzo slightly and place into large bowl. 

-Add remaining ingredients, mix well. Refrigerate 3-4 hours or overnight before serving.

Peas and Thank You: HoneyBaked Ham & Black-Eyed Pea Soup with Greens

You’ll find most people throughout the south (and among our HoneyBaked Ham Douglasville crew) eating black-eyed peas and greens on New Year’s Day, but do you know why?! 


Have you ever heard of the old saying, “Eat poor on New Year's, and eat fat the rest of the year?”

Eating black-eyed peas on New Year’s has been considered good luck for more than 1,500 years. It's also been a Jewish custom to eat these particular legumes in celebration of Rosh Hashanah, which is the Jewish New Year. These fiber-packed peas also symbolize humility and a lack of vanity (who knew?!). 

Obviously, most people associate good luck with monetary gain...where is where eating greens with your black-eyed peas comes in! The most common veggies to mix with your good luck beans are:
- turnip greens
- mustard greens
- collard greens (these are our fave)

Pork is a staple of just about every Southern meal, so it’s usually cooked with the black-eyed peas. The pork (especially when you use our delicious HoneyBaked Ham ) seems to be in recipes mainly for flavor rather than symbolism... but many people believe that because pigs root forward when foraging, the pork represents positive motion.

Enjoy this delicious HoneyBaked Ham & Black-Eyed Pea Soup with Greens this New Year's Day:

In a 4 quart saucepan heat and cook until tender:
 - 2 tablespoons olive oil
 - 1 medium onion
 - 1 garlic clove

Add:
 - 1/2 pound collard greens (stems removed and leaves finely    
  chopped)

 - 2 cups of low-sodium chicken stock
 - 2 cups water
 - 1 small, finely minced jalapeño pepper (optional)
 - 1 small knuckle from a HoneyBaked Ham bone,
   with the meat removed from the bone (approx. 3/4 to 1 cup)

Simmer until greens are tender (about 20 minutes).

Meanwhile, rinse and drain:
 - a 16 oz. can of black-eyed peas (or about 1 1/2 cups frozen and thawed). Mash half of them with the back of a spoon and add all to the soup mixture.

Add:
-1 medium tomato, diced

Simmer for 5 more minutes. Season with salt and pepper

Stir in:
 - 1 teaspoon cider vinegar
 - a dash of hot sauce (optional)

Serve & enjoy (serves 2) your HoneyBaked Ham & Black-Eyed Pea Soup with Greens.

The Right Way to Do Leftovers: HoneyBaked Ham & Turkey Pot Pies


Now that Thanksgiving has come on gone, you're probably thinking, "What am I going to do with all these leftovers?"

Don't worry, HoneyBaked Ham Douglasville has got you covered with this tasty recipe for Ham & Turkey Pot Pies!

In a Dutch oven, bring to boil and simmer:

-3 cups canned low-salt chicken broth
- 1 small celery root, trimmed and diced into 
1/2 inch chunks (or 5 ribs of celery plus tops, sliced)
- 3 new potatoes, diced

Cook 7 minutes and add:

- 2 carrots, diced

Simmer until tender (about 10 minutes). Drain, reserving broth for another use. Set aside vegetables for later.

In a heavy saucepan sauté:

- 5 tablespoons unsalted butter
- 1/2 cup chopped onion

Add:

- 5 tablespoons all purpose flour

Stir 2 minutes until bubbly and gradually add:

- 1 cup reserved broth
- 1 1/2 cups milk (do not use nonfat or low-fat)

Cook, stirring about 4 minutes until sauce thickens. Season with salt & pepper and add:

- 1 1/2 teaspoons dried thyme
- 1 cup sliced HoneyBaked Ham
- 1 cup diced HoneyBaked Turkey Breast

- reserved celery root, potato and carrot (frozen peas may also be added)

Heat until bubbly. Divide mixture into 6 individual casseroles and top each with:

- A refrigerator biscuit (from a package of 6) that has been cut into quarters and placed on top in a flower shape (kitchen shears work well for this)

In a preheated oven 450°F. place pies on large baking sheet. Bake for 8-10 minutes or until biscuits are lightly browned. Serve & enjoy (serves 6) your HoneyBaked Ham & Turkey Pot Pies!

HoneyBaked Ham Douglasville & The Origin of Thanksgiving

Did you know the first American Thanksgiving was celebrated in 1621 to commemorate the harvest reap by the Plymouth Colony after a harsh winter in the north east?!

That's right-- It was during that year Governor William Bradford proclaimed that particular date as a Day of Thanksgiving. 

Originally, colonists celebrated this Day of Thanksgiving with their traditional English Harvest Feast, and invited the local Wampanoag Indians to join them in their festivities.

By the mid-1800s, many states across the U.S. began to observe this Thanksgiving holiday (although it was not yet recognized nationwide). 


But in 1939, 1940 and 1941 Franklin D. Roosevelt (seeking to lengthen the Christmas shopping season) declared Thanksgiving an official national holiday each 3rd Thursday in November. 

Later on during the year of 1941, however, our famous day of giving thanks was moved to the 4th Thursday of every November, where it remains to this day.

It is believed turkey was the main course at the Thanksgiving feast during the very first Harvest Festival, which is why it's been adopted through time as a staple for Thanksgiving dinners across the nation.

And although turkey was the centerpiece of the table for many centuries of Thanksgiving celebrations, ham made its way to our gatherings as an alternative main dish (mainly to offer as a variety). 

Today Honey Baked Ham has been the traditional ham of choice since 1957 for many of our holiday traditions because aside from its succulent flavors, it's also
