Eggs-It Strategy: HoneyBaked Ham Egg & Cheese Biscuit Scrambles

Whether you're entertaining guests from out-of-town or just want to whip up something special for your family this weekend, it's always good to have a good Eggs-It Strategy up your sleeve.

Try this week's featured brunch-in-a-biscuit recipe from your friends at HoneyBaked Ham Douglasville ... It's nothing short of deeee-licious!

HoneyBaked Ham Egg & Cheese Biscuit Scrambles


Preheat oven to 350º.

Lightly spray a baking sheet with:
- butter flavored cooking spray

In a large mixing bowl, combine and mix:
- 4 cups plus 2 tablespoons all purpose flour (about 1 lb.) & 1/2 tablespoon baking powder
- 1/8 teaspoon freshly ground black pepper
- 1 teaspoon salt
- 1 finely minced green onion, including some of the green
- 1 1/2 cups diced HoneyBaked Ham
- 1 cup grated white Cheddar cheese

Add and mix to form a coarse crumbly mixture:
- 1 cup shortening

Fold in:
- 1 1/2 cups milk.

Lightly flour a work surface and turn dough out onto it. Knead the dough by folding each side towards the center. Pick up the dough, dust the work surface and turn over and repeat the process. Flour your work surface one more time and flip the dough, this time pressing it out to a thickness of 1 inch.

Cut the biscuit mix using a 2 1/4-inch round cookie cutter. Place them on the baking sheet and bake until golden, about 30 minutes.

Meanwhile, whisk together:
- 1/2 cup milk
- 10 large eggs
- salt
- freshly ground black pepper

In a large non-stick sauté pan over medium heat, melt:
- 2 tablespoons butter
Cook egg mixture to a fluffy scramble.

Split the biscuits and divide eggs among each biscuit. Top with other half of biscuit, serve & enjoy (makes 8 servings)!

The More, the Sherry-er: HoneyBaked Ham & Sherried Mushroom Soup

In light of National Soup Month, our HoneyBaked Ham Douglasville crew is pulling out all the stops when it comes to serving up some oh-so-yummy soup at home. Check out this quick & easy recipe using our classic HoneyBaked Ham !

HoneyBaked Ham & Sherried Mushroom Soup


In a saucepan, melt together over moderate heat until foam subsides:
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil

Sauté over moderately high heat until liquid evaporates and vegetables begin to brown:
- 3 large shallots, finely chopped
- 1 clove garlic minced
- 1 pound assorted exotic mushrooms, half sliced and half finely chopped

Add and sauté for 1 minute:
- 1 cup diced HoneyBaked Ham

Add and heat through:
- 3 tablespoons cream sherry

Sprinkle over all, stir and continue to cook for 3 minutes:
- 2 tablespoons flour

Stir in, bring to a boil, then reduce heat and simmer 15 minutes:
- 2 cups low sodium chicken broth

Remove from heat and stir in:
- 3 tablespoons sour cream
- 1/4 cup chopped fresh chives

Season with salt & pepper then serve with homemade Roquefort toasts. To make toasts you will need: 

1 pita bread
Slice into 6 wedges and bake in the middle of your oven for 10 minutes at 350.

In a bowl, cream together and then spread evenly on the toasts:
- 1/4 cup crumbled Roquefort cheese, softened
- 1 tablespoon unsalted butter, softened

Serve with soup and enjoy (makes 2 servings)!

You Got Served: How Big Your HoneyBaked Ham Should Be for Christmas Dinner

With just days left until the long awaited Christmas holiday (can you believe it?!), hopefully you've ironed out your plans already for what you'll be bringing to the dinner table.

If you are unsure of just how much food to serve up... here are a few tips from our HoneyBaked Ham Douglasville Crew about approximately how much ham you'll need for that special meal with your loved ones:

The typical rule of thumb that's worked well for nearly 3 decades of preparing HoneyBaked Hams is to calculate approximately 0.33 lbs. and multiply that by the number of guests you anticipate will be dining with you.

For example, if you plan to have half a dozen guests... Multiply 0.33 by the quantity in your dinner party (0.33 x 6), which would equal 1.98 lbs. You would need about 2 lbs. of ham total (excluding the weight of the ham bone) to feed all those hungry mouths! Two of our HoneyBaked Ham by the Slice packages come in convenient 1 lb. servings each, and are ideal for an intimate gathering of about 6 people.

If you plan to have more than half a dozen attendees, our HoneyBaked Mini Hams are a perfect fit. At 4 to 7 lbs. in total weight, these smaller versions of our signature entrees are great for up to 7 supper guests.

Nacho Ordinary Supper: HoneyBaked Turkey Tortilla Soup

Craving some yummy comfort food with a Tex-Mex twist?

Here's a recipe from our HoneyBaked Ham Douglasville crew that's quick, easy and made from our classic smoked or oven-roasted turkey!

HoneyBaked Turkey Tortilla Soup


In a Dutch oven or stockpot sauté until tender:
- 1/4 pound bacon (4-6 slices), diced
- 1 medium onion, diced
  
Add and bring to a boil:
- 6 cups chicken stock
- 1 tablespoon ground cumin
- 1 minced serrano chile (optional)
- the cobs from 2 ears of corn (cut corn from cobs and reserve for later)

Reduce heat to simmer and add:
- 1 (one) 15 oz. can black beans, drained
- 1/2 pound diced HoneyBaked smoked or oven-roasted turkey
- 6 to 8 diced plum tomatoes
   
For the reserved corn:

- Simmer for 20 to 30 minutes.
- add 1/4 cup minced fresh cilantro

Serve over bowls filled with:
- corn tortilla strips
- diced avocado
- shredded Jack or Asada cheese
- a small wedge of lime (optional)

Good Down to the Bone: HoneyBaked Ham Bone Stew

You may not have much meat leftover from Thanksgiving, but if you saved your ham-bone... 

you're in luck because HoneyBaked Ham Douglasville has a delicious stew recipe perfect for chilly nights like tonight!


Honeybaked Ham Bone Stew

In a heavy Dutch oven, heat over medium-high heat:
- 2 tablespoons corn oil

Then sauté the following ingredients until tender (about 5 minutes):

- 1 large onion, chopped
- 3 large garlic cloves, finely chopped

Add and stir to mix thoroughly:
- 1 1/2 teaspoons ground cumin
- 1 teaspoon dried thyme, crumbled
- 1 bay leaf
- 1/2 teaspoon dried, crushed red pepper

Add the following ingredients and simmer for about 45 minutes to an hour:
- 2 (two) 14.5 oz. cans of chicken broth
- 1 (one) 14.5 oz. can of sliced, stewed tomatoes
- 1 ham bone with some meat on it (you can also use 1 1/2 cups of diced HoneyBaked Ham instead, just reduce your cooking time slightly)

Remove bone from soup after 45 minutes to an hour. Allow bone to cool, then scrape the remaining meat off of it (if any) and return remnants to your pot of stew. 


Simmer for an additional 15 minutes. Season to taste with salt and pepper.

Ladle into bowls, top with a small bit of shredded cabbage or chopped cilantro.

Serve & enjoy (serves 6) your HoneyBaked Ham Bone Stew!
